Crafting Cannabis-Infused Olive Oil

But before we can dive into the culinary adventure, we must first activate the cannabinoids in the cannabis—a process known as decarboxylation. Traditionally, this involved baking the buds in the oven for hours, but we’re about to unveil a more refined and flavorful method using the sous vide technique.

Ingredients

  • 3 1/2 grams cannabis flower (see Notes), about 1/8 ounce
  • Three tablespoons of distilled water
  • 1 cup extra-virgin olive oil

Active Time: 50 mins

Total Time: 1 hour, 20 minutes

Yield: 1 cup

Step 1: Decarboxylation

Prepare your immersion circulator, cannabis grinder, vacuum-sealable bag, and vacuum sealer. Grind the cannabis buds into small pieces and place them in the bag with distilled water. Seal the bag completely and set your immersion circulator to 200°F. Submerge the sealed bag into the water and let it decarb for 30 minutes, rotating it periodically for even heating.

Before cannabis can be utilized in a recipe, it needs to undergo a process called “activation” or decarboxylation to unlock its full potential. Traditionally, this involved heating the buds at a low temperature in the oven for several hours. However, this method often resulted in flavour loss and bitterness.

Fortunately, there’s a superior—and more flavorful—alternative. Decarboxylation using the sous vide technique eliminates the uneven and potentially harsh heat of conventional methods, preserving the aromatic terpenes found in cannabis. Once decarboxylated, the cannabis is gently infused into olive oil, creating a fragrant ingredient for sweet and savoury dishes.

Step 2: Infusion

Once the decarboxylation process is complete, transfer the bag to a bowl of ice water to halt the cooking and preserve the precious terpenes—the aromatic compounds in cannabis responsible for its distinctive flavour and aroma. Strain and reserve the cannabis, discarding the liquid. In a small saucepan, combine the olive oil and cannabis, then gently simmer over medium heat for 20 minutes, stirring occasionally. Remove from heat and let it steep for 30 minutes to allow the flavours to meld.

Step 3: Straining and Storage

Strain the mixture through a fine-mesh sieve into a resealable, heat-proof food container with an airtight lid. Refrigerate and use within 30 days to maintain freshness and potency.
